Had a great night's sleep - didn't wake up until 9:00, which is EXTREMELY late for me! Of course, we then had to wait for Kelley and Victoria to wake up and get dressed before heading down to breakfast. By the way, I neglected to elaborate on just how this resort is laid out. It's spread out over 55 acres, but almost ALL of it is up and down hill. You don't just walk out of your room down to the beach or the restaurants. You almost HAVE to call for a shuttle to come pick you up since the hills are so steep! We didn't find this to be a hindrance - it actually added to the ambience and the atmosphere! Anyway, we just made it to breakfast! Apparently on Sunday, the schedule we had been told didn't quite apply as they serve brunch and breakfast ends early. Oh well. We still had a yummy breakfast: a little American, a little British, and a little Caribbean!

Since we hadn't really established a game plan for the week, we decided to make this a low key day. After breakfast, we headed back to the room so Kelley and Victoria could break in the splash pool while Kathie and I looked through the guide books and magazines supplied by the hotel to figure what we wanted to do and when. About an hour later, the girls were cold from the water and we had our list, so we headed BACK down the hill. While Victoria and Kelley played on the beach, Kathie and I headed over to the concierge to start setting up plans and dinner reservations for the next couple of days. From there, we joined the girls back on the beach to play in the sand and explore the waterfront.

We broke for lunch in the beachfront restaurant and then headed back down to the beach. Victoria's sand castle had been swallowed by the waves (the waves were higher than usual for this time of the year), so she and I proceeded to rebuild it with LOTS of moats and walls (when we left about four hours later, it was still there!) We also spent some time with Sydney and Dorothy, a little girl and her mom who had been on our plane flying down from PHL yesterday. All six of us swam out to a trampoline that floated on the water out in the bay. It was a simply beautiful day! It wasn't too bright and there was a nice breeze with lots of clouds.

Around 4:30, we headed back up to our room to get ready for dinner. We really can't recommend Fodor's guides enough! They've never failed us before and tonight, they came through again! We headed to the farthest points to the north that you can go without getting wet to a restauarant called The Great House (Ph: (758) 450 0450, e-mail greathouse@clubsaintlucia.com, online profiles available at Fodor's and Frommers).
The building is an old plantation house overlooking the Caribbean that looks like it could have easily been a setting for one of the early James Bond movies like Dr. No! The waiters are all in black and white and the women are in traditional St. Lucian dresses (Victoria particularly loved their colorful hats). We had a simply wonderful dining evening. Since we arrived much earlier than we had expected, we started off having cocktails high over the Caribbean as we watched the sun set behind a couple of mountains to our west and then into the sea. A little while later, we moved over to the dining area to enjoy dinner. Absolutely delightful with shrimp/scallops gratinee for Kathie, roasted goat cheese for me, and lobster bisque for Victoria as starters and then on to the main course. Perfectly done! Victoria had grilled fish, Kathie had their specialty rack of lamb, I had a honey-glazed duck and Kelley had beef tenderloin. Mmm!

The personnel were perfectly charming--Victoria was particularly enchanted with Laurence, the strolling guitarist, who sang a couple of songs just to her. He even let her play a song - letting her strum the guitar while he played the chords. She loved it! The whole evening was delightful. If you're looking for an elegant way to spend the evening, we HIGHLY recommend it. If we didn't have so many other restaurants that we wanted to try out, we'd probably go there again (Victoria would definitely like to go back!).
When we got back to the hotel, it was an early night for all of us as we had a busy day planned for most of the day tomorrow.
