The German dining scene has undergone a major metamorphosis in recent decades, resulting in a growth in the number of restaurants that are recognized by the Michelin guide for their quality.  This list of restaurants should not be considered complete and 100% authoritative, but rather as a starting point.  We merely suggest that you listen to your inner voice when seeking a restaurant in a town or region with high numbers of tourists.

As the name implies, this is an excellent option to the heavier traditional German cuisine, offering carefully prepared and tasty dishes from fresh and saltwater (there are still options for meat-lovers).  They are closed on Sunday

Located just outside of Boppard, connoisseurs of good food will be at home in this guesthouse. Their staff knows how to conjure up tasty dishes and menus from produce fresh from the market. They are closed after Easter for two weeks and from November 15th to 25th.

An excellent destination for traditional German cuisine paired with regional wines.  The 500-year-old building makes this worth the slightly out-of-the-way location.

Located just outside of Bingen, their terrace offers a beautiful dining experience that overlooks the Mäuseturm, or Mouse Tower.  Their menu consists of local cuisine and they offer over two-dozen wines by the glass, including a trockenbeernauslese.  They are closed on Sundays and for two weeks during the summer.
